Ingredients (you will need a crock pot)
1 onion chopped
2 cans chili beans (16 oz)
2 cans black beans (15 oz)
2 cans whole kernel corn, drained
2 cans tomato sauce (8 oz)
1 can bottle of beer
4 cans Rotel
2 packages taco seasoning
2 lbs chicken breast
shredded cheese
sour cream
crushed tortilla chips (you have to crush them)
Directions
- Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
- Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
Your man/woman/partner/friend/acquaintance/cousin/mom/dad have been working hard all day... the thing to do is to make this soup!!!!!!!!!!

ReplyDeleteYES! I've been waiting for this. Too bad I've already been to the grocery.... This looks like a perfect Sunday meal. You use hominy instead of corn, right?
